Variety Rice

Today .... its Tomato Rice

TOMATO RICE
(Serves : 3 People)











Ingr
edients

1.Rice - One and a half cup (250 grams)
2.Water - approximately 4 cups
3.Tomatoes -
4 numbers .. Fully rippen
4.Red Chilly powder - 1/2 teaspoon
5.Turmeric powder - 2 pinches
6.Finely chopped Garlic -1 teaspoon

Seasoning Ingredients
1. Cinnamon - 1/2 inch size
2.Cardamom - 1 no
3. Clove - 4 no.s
4. Bay leaf - Small size 1 no
5. Star-Aniseed 1 no Small size
6. Nutmeg powder - 1 pinch
7. Mint leaf - Chopped 1 teaspoon
8. Onion chopped - 1 tablespoon
9. Cooking Oil or ghee - 2 tablespoons
10. Salt to taste

METHOD

1. Cut tomatoes into 2 inch size pieces
2. Soak rice for 10 minutes before cooking
3.Keep aside all seasoning ingredients
4. Heat the 2 tablespoon of Oil in
a deep pan with slow flame
5. Add cinnamon , clove , aniseed
, cardamom , bay leaf , nutmeg powder ..
6. Let it fry in oil for quite a few minutes until swollen
7.Add chopped onions and saute for 30 seconds.
8.Add garlic finely chopped and saute for 30 seconds
9.
Add chopped mint leaves
10.Add chilly powder 1/2 teaspoon
11.Add slitted Green chillies 2 Nos
12.Add chopped tomatoes
13.Add salt 3/4 teaspoon
14.Then add the soaked rice and water

Finally transfer the above in to a pressure cooker and cook until 3 whistles or electric rice cooker with default pre-set time...

TIpS

Before serving add a teaspoon of ghee over the cooked rice stir it gently


YOUR TOMATO RICE IS NOW READY TO EAT.

Side Dish Options
: Onion raita , or potato fry....

How to prepare onion raita

  • Plain Curd- 1 cup
  • Finely chopped onion- 2 tablespoons
  • Finely chopped tomatoes- 3 tablespoons
  • Green chilies- 1 (finely chopped)
  • Chopped coriander- 1 tsp
  • Cumin powder- 1/8 tsp
  • Salt

Whisk the curd with little water. Add onion, tomato & green chili. Season with salt and cumin powder. Garnish with chopped coriander.

This is another method for preparing Tomato Rice ....

Procedure 2

(for small children and aged people)

Ingredients

Rice - One and a half cup(250 gms)

Tomato - 4 no.s (medium size)

Cooking Oil - 2 tablespoon

Onion chopped - 1 tablespoon

Garlic chopped  - 1 teaspoon

Red chilli long - 6 no.s

Chilly powder -  1/2 teaspoon

Mustard seed - 2 pinches (1/4 teaspoon)

Lantil (Urad dhal) - 2 pinch(1/4 teaspoon)

Salt appropriate to taste

Fennel seeds - 2 piches(1/4 teaspoon)

Curry leaf - 1 fistful

Ghee - 1/2 teaspoon

Method

1. Soak rice in water 10 minutes before cooking.

2. Keep all ingredients aside.

3. Take a deep pan medium size

4. Now pour in cooking oil (2 tablespoon) and heat in slow flame

5. Add mustard seeds let it splutter.

6. Add lentils then onion , garlic , chilly powder , turmeric powder , curry leaf 

7. Now saute for 30 seconds

8. Add tomatoes saute for 1 minute

9. Cover the pan with a lid for 2 minutes let the ingredients blend well

10. Add rice with water , add salt

Finally transfer the contents in to a pressure cooker (medium size cooker) and leave it until 3 whistles (5 minutes)

Electric cooker : Leave it for 10 minutes

NOTE : If you like to cook in Electric rice cooker you have to season all ingredients in fry pan then transfer it in electric rice cooker

TIPS.

Before serving add 1/2 teaspoon ghee over the cooked rice and stir gently..
